Beekeeper’s Delight

For a sip of spring in a cup, we have a drink you will love and you should share with your beekeeping friends. The Beekeeper’s Delight uses local honey, deliciously fragrant lemon balm, lemon juice, St. Germain, and gin.

Beekeeper’s Delight, makes 2 drinks

5-6 leaves of lemon balm (if you cannot find lemon balm, mint can be substituted)

1 lemon, juiced and zested

1 Tbsp local honey

2 oz gin (we used St. George Botanivore Gin)

1 oz St. Germain Elderflower Liquor

Club soda

Directions:

In a cocktail shaker, muddle lemon balm leaves with lemon juice and zest. Add ice, honey, gin, and St. Germain. Shake vigorously. Pour over ice into 2 tumbler glasses. Add a splash of club soda, stir. Garnish with lemon balm leaves.
